What's your favorite type and cooking method?

When I feel lazy but still want some meaty goodness, I'll make like a pound of italian, and just eat it with some beer and hot sauce.

The hot sausage at Faiico's Pork Store on Bleecker St. in NYC....slowly grilled with flash crisping at the end. Cold Sapporo and perhaps a hunk of crisp Italian bread. Close second is the hot sauage from Ottomanelli's.

A good spicy italian sausage.

cooked in a frying pan first covered with a bit of water (and maybe some fennel) and then uncovered to let the water boil off and the sausages brown.

I usually boil the sausage first, then shake it dry and brown it in some olive oil...

I'm totally gonna make some tonight after I work out, I still have some stout left in the fridge. Perfect.

Champagne truffle chicken sausage from Oyama at Granville Island in Vancouver. Sounds kind of poncey, I know, but man is it good. I just slow cook them over a low to medium heat. Served with buttery mash potatoes and a Chimay rouge.

When not available, I try the other stuff in Oyama's rotation (small sample, it's just a great operation):

Fresh Sage Bangers
Toulouse Parsley & Fresh Garlic
Elk Toulouse
Thuringer
Lemon Ginger Bratwurst
Red Wine, Peppers & Fennel
Tuscan Fennel
Jerk Pork
Beef and Horseradish
Beef & Stout
Sweet Ginger Duck
Duck and Port Wine
Chicken Banger
Coq au Vin
Sweet Italian Chicken
Tunisian Merguez

Take chorizo out of the casing and use it for any number of things. I made a lasagna with chorizo as well as a ziti. Very nice.

Reading that makes me hungry. There's a burrito shop somewhat nearby that offers chorizo burritos, but my local grocery doesn't seem to carry it
