Saphir’s “Graisse HP Dubbin” VS. “Everest Graisse Végétale Dubbin”

I recently learned about Saphir Graisse HP Dubbin (neutral) and Saphir Everest Graisse Végétale Dubbin; my cobbler Josef recommended them for my new Red Wing Iron Rangers (Amber Harness Leather). If you have experience or information about these products, please share. Josef seemed ambivalent about which I should use, and I have not found comparative information. Saphir.com does not even list these products on their site.*

Background: I told Josef I planned to use Renovateur, shoe polish, and shoe wax ("the three steps") on my Iron Rangers, and he instantly disabused me of this plan. He said to use the graisse only, nothing else -- even to clean them -- but from time to time, pigmented polish would help restore faded areas.

Fun Facts: The HP ("high performance") contains salmon oil. It used to be made with seal oil -- the green tin has a seal logo. Everest is vegetable-based in a yellow and red tin. MonsieurChaussure.com has an interesting recommendation: "When applied to [only] the welt area of Goodyear shoes, the [Graisse HP] dubbin prevents the wax stitching from coming apart, thus increasing the useful life of your leather shoes." Very cool.

* Saphire does feature its higher-end Medaille D'Or Dubbin Graisse Conditioner with mink oil and salmon oil on its site.
