    Best seafood market for dry scallops? North of midtown preferred. but will travel if I must.

    Citarella at $12 per for in the shell seems somewhat pricey.

    anyone have tips on dealing with the dmv? holy shit they are stupid. i need to pay a ticket for driving and using a cell phone.

    the worst part about driving into NYC is driving through NJ. I think a child with a crayon designed their highway system.

    At Citarella prices I might as well just take people to dinner so am looking for a reasonable alternative. There's a place in Harlem, but when I asked for dry scallops he said, "sorry, sir, all our scallops come from the ocean."

    yea i know it was extremely stupid on my part but i never drive in the city and didnt know. i also had seen other people use their phones with iphone headphones but the cop said it has to be a truly hands free device.

    ^^ Sure, but I'm way uptown and want to stay above midtown if I can.

    Those not soaking in phosphate.

    When shopping for sea or bay scallops to use for recipes, look for "dry-packed" scallops. These have been shucked and shipped packed on ice, with no chemical additives. They tend to have a slightly pink or off-white hue and a pleasant sea smell. Avoid the very white "wet-packed" scallops that are sold in many supermarkets. These have been soaked in a solution containing phosphate, a whitening agent that keeps them fresh longer but also allows them to soak up more water, increasing their weight by almost 30 percent. They tend to release a lot of liquid when they're cooked, causing them to steam rather than sear to a nice caramelized crust. Phosphate also gives the scallops a slightly soapy flavor.

    I guess I only buy in quality markets.

    lefty, if you want "uptown" go to randozzo's on Arthur Ave in the Boogie Down. Best fish market I have seen on the East Coast.
