    I've cooked beef shanks a few times. They're nice. But I prefer veal or lamb.

    OK, so today I started playing with this moo gloo.

    Here is a chicken leg and thigh, deboned, sprinkled with transglutaminase.

    Then, a layer of chicken mousse with chestnuts is spread evenly on top.

    The second leg and thigh, also sprinkled with the moo gloo, is placed on top.

    And the skin is folded over to seal.

    Now, it needs to sit for 6 hours to bind. We will see how it turns out.

    The recipe I am going by calls for glue. I'd imagine it has some effect on the way it all holds together.
