Sole skin can be pulled off with your hand in one piece. It is super easy, and one of the reasons it is such a beloved fish.

A friend made it for us. I actually was just going to cut it into slices and use it as bacon unless you have a better idea. I feel as if you might.

edit: friend confirmed that it is cured and smoked. can't imagine it could be used for anything besides bacon. maybe ill peel off and crisp the skin.
