    Bought some sliced mangos from Trader Joe's refrigerated section and got home to find them not very ripe and hard to eat. Blended it with some water and simple syrup in my Vitamix, heated it with gelatin sheets, and put it in the freezer. I don't have much room so I broke the chunk into thirds and set them over a coffee filter. Got clear mango water which I mixed with more simple syrup (turned out to be a mistake) and carbonated with a iSi soda machine. The final product, diluted with plain water, is a perfectly clear mango soda.

    The one thing I ran into with these Atlantic Dory are the "caps" on either side that cover a good bit of the flesh. I had to run my knife underneath to get the meat off the bones. I don't know if it's just the picture, but I didn't leave much on the fish.
