    For pickles, you gotta try out these "recipes" if you've got a chamber sealer/vacuum thingy. They're from a restaurant here in Hamburg and are fast to prepare and taste awesome.

    Beets (my favorite of the three when I ate them)
    Slice beet very finely, vacuum with raspberry vinegar and rose water. Just needs like 10-20 minutes and it's done!

    Carrots
    Cook them very lightly, i.e. very short but prolly a little more than blanching. Vacuum with ginger honey.

    Cucumber
    Fine slices, vacuum with dill

    Sounds easy, is easy, tastes great. Sorry that there are no measurements - gotta figure it out yourself.

    No roasting of the bones. Just tomato paste and tomatoes. It turned out much better than I had expected. The flavor is rich, without being aggressive--neutral, almost. I guess it's a good sign that I could probably drink a bowl of it. Tasty stuff.

    Leaving the seeds in or not is a personal preference- just makes it hot when they're left in.

    But they're poblano's. They have almost no heat to begin with. Didn't think it would matter too much.

    So its not perfectly smooth, and I couldn't crank the shit out my VM because the additional heat was causing the mix to "meld" together. Its mostly sandy with a very tiny chunk or two in there. I said fuck it. Hopefully it will dissolve up in the final mix.

    Not necessarily, I've had some that had a good amount of heat. Also, this is why you need a spice grinder, playa, or at least a mortar & pestle.
