    Here's the thing. I can always get the wing joint off cleanly with no meat or caritlage or anything still stuck there. That it's impossible with the legs, you have to cut off the whole knuckle. But I can always get through the bone cleanly.

    Also, when you plate a breast, the wing bone tends to stick up. If it's cut, then even if the cut is clean the diner has a close up view of bone marrow. Legs OTOH don't tend to be plated upside down, at least I don't do it that way.

    So, back to the old way, which looks better anyway.

    Sharpness is irrelevant when cutting that bone. Fwiw, manton is right about propriety, but a breast looks better without the wingbone at all.

    What? I love the look of a breast with the wing bone. I can remember when I first started noticing it in restaurants and thinking it was so cool. It was years later that I finally learned how to do it and I was very happy.

    Also, you save a little more meat that way.

    With duck, I don't leave on the wing. But with other birds, I typically do.

    If you can find something approximating a Scandinavian market (even including the market section of an Ikea), you should be able to find all sorts of tasty pickled herrings--dill, mustard, cream, tomato, etc.. The ones pickled in sherry are excellent, but you are going to have to find somewhere better than Ikea to buy them.

    Pickled is easy to find. The real treat, I think, is fresh herring with its roe or milt.

    I know I've been going on about it, so here, today...

    I have no doubt it is and would try it even if it was called semen. I just think people are more grossed out when they read "fish semen" instead of fish milt.

    I don't know how to eat the roe. I'll probably salt it and dry it. No idea. The milt you steam lightly then dredge in flour and cook quickly in butter. It's a real delicacy. Most of the herring caught in San Francisco gets exported to Japan, so they probably have a million different ways that they like it. Herring, the fish, is also very good. Especially with mustard.
