    Not trying to be a dick - we knew what the problem was. Thighs in particular will render a lot of fat and juice, and when you've got stuff piled up like that where the heat of the oven can't get to it, and that's further exacerbated by the fact that they're bathing in liquid, you're going to have trouble cooking them.

    The photos only made me feel sad that you are eating plain old chicken thighs without the skins every single day :(

    Yep, eat a pound a day. If you've got quick and easy suggestions for making them more interesting I'm all ears.

    well, i know you're on a strict dietary regimen and I know it's working for you and if this is easy and you're happy with it, great.

    I just about refuse to cook any chicken without the skin on it.

    MMMmmmmmmm, chicken skin.

    Same boat here Rambo- cook breasts or thighs by the pounds. I don't season them beyond salt/pepper so that I can use them in various ways... ie with rice, or on salads or whatever...

    What's the best way to cook a steak at home? I don't have anything fancy, just a stove-top, oven and broiler. I like them medium rare. I tried in the broiler, but I can't seem to not burn them. Any ideas?

    I didn't see this.

    We consistently eat dinner together, every night.

    We have a 2-year-old who is generally tearing around, so I don't know if I'd call it "chill time" at the moment, but it's an important part of our life that we dine together nearly every day.
