    In that case, my dream is to open a restaurant called Tantalus, where the beautifully presented and expensive food is constantly whisked away before you can eat it.

    Here's how a review would read by a "Foodie blog".

    When one dines, one exults, if not dances in the total sensory experience of the meal.

    "Oh, that presentation is stunning!"
    "Can you smell that cardamom? Divine!"
    "I just love that unctuous mouthfeel!"
    "This music is wonderful!"

    And of course.... the flavor.

    However, all too often when one dines out to eat, we focus so much on that latter sensory desire we forget all the other stimuli that make our eating experience so great.

    This is why Tantalus is so great. It forces the diner out of his comfort zone and to consider the entire gamut of the dining experience without getting bogged down in the food. I must admit that the initial challenge did seem daunting, however with an adventurous palate you realize just what you miss in a restaurant when one eats Chef's food...

    Thanks Doug. Although, truth be told, I think I'd have preferred my first success to come in something a bit more...meaningful I guess.

    I'd like to cook more with Kale, I think. It is cheap, nutritious etc. I've made this wilted kale and sausage recipe, I know about kale and sausage soup... basically I have two recipes wilted kale and kale with sausage. I think perhaps a little more versatility may be in order.

    I tend to think the best hamburger patties are made up of a mixture of different cuts. I think most people would agree. Have you tried anything but 90% ground beef?

    @ Eric re: Tantalus. :laugh: Well played.


    Question: those of us that have Sig Os...how many of you consistently eat dinner with your Sig O and use it as a social time? We listen to chill music, eat dinner, and share a bottle of wine for about 1.5 hours almost every night.

    Not to derail this convo but I cooked a tray of thighs last night and wanted to show you guys what I was talking about.

    Oddly enough, even after about 40 minutes a few parts of this batch were still a bit underdone.

    If Tantalus does well, I would open up a farm-to-table setup next door. The cash that people spend at Tantalus would be ground up into a nutritious mash along with their unconsumed food and force-fed to geese. The foie gras would then be served to actors portraying homeless people. Business as performance art as half-ironic allegory of a trickle-down economy (with the real arteries of simulated hobos being clogged with fatty livers distended from detoxifying the excesses of the system).

    Dude, it's simple. Just do what iammatt said. Buy a second sheet pan. buy a rack for each sheet pan. Don't crowd. There should be space around each breast, they shouldn't touch - that way air can get all the way around them, the rack helps the heat get under them. that way they will cook more evenly and all will cook completely. problem solved. i promise.

    We don't... I got into a fitness kick several years ago and became very regimented about what I eat, when. We do out 1-2x a week for 3-4 hours for a good meal. At home it's catch as catch can most nights.
