    Speaking from a limited background on horses, I don't think the meat available for purchase in the states will be very good. We don't really raise horses for consumption. So, while it may be profitable for breeders to sell horses for their meat, it probably won't translate to a very good product for those eating it.

    Where are you buying your horse, edina?

    yeah. i've had it in italy. but i remember it from being a kid in new mexico when there was a huge scandal when it turned out the company that had been supplying ground meat for public schools had substituted horse for beef. i actually thought they were pretty good burgers.

    Horse is not bad. Why would you really want to eat a a land mammal (excluding your moms) raw though? it's not really satisfying.

    Is there a source for transglutaminase in smaller quantities than 2 pounds, and for less than $100?

    Can someone suggest a hot salsa that I can buy online that is actually hot? None of this "HOT habanero" bullshit that doesn't even begin to tingle my tastebuds. These habanero salsas are fucking weaker than a fucking raw jalapeno.

    Also basashi is fantastic with beer. Don't understand the hate for horse meat. People have been eating it for centuries.

    I'm actually pretty interested to see how things turn out. I may order a pouch to run some experiments during my xmas break when I actually have some time to do it.

    Blair's makes salsa. It's definitely the hottest I've had, and if it isn't enough you can always buy some of the hot sauce and add it.
