How does a stand mixer have difficulty whipping cream?
or mayo? it's easier than a hand blender because you can concentrate on just the oil
Immersion blenders are the best for mayo. You just stick an egg in a keg cup, then add a little salt and a little vinegar. You pour all the oil right on top and then stick the immersion blender at the bottom and hold it on. It pulls the oil slowly into the egg, so it emulsifies. You don't need to worry about adding.
The bottom of the whisk attachment does not touch the bottom of the bowl, so with liquids, especially if you're not using a large amount, it can often miss the target or produce lackluster results.
Not saying one way is better than another. Just that a hand blender has its uses.
What can be done with fresh lima beans?
fresh limas are one of the best things in the world. treat them like you would a fava: sure fire is render a little bacon, pour off most of the fat, sizzle some shallots, then toss the blanched limas in that. just a touch of cream wouldn't hurt, either.
eta: for presentation, use a large white bernardaud charger and stack 3 beans in the center of each. it'll be beautiful.
