radishes are in season

I've always like radishes in salads and such, and they are in season right now, with lots of good varieties from the local market.

Does anyone have any interesting recipes for dishes that feature radishes (aside from just salad)?

You could do a radish puree with torchon de fois gras /piobaire

Enchiladas Yucatan

serving dish, ideally ~9x13x2, warmed

12 tortillas
8 lg eggs, hard boiled, diced, well salted
1 med onion, fine dice
6 large radishes thinly sliced
3/4 cup crumbled, salted queso fresco other Mexican cheese, crumbled (about 4oz)

Small bowl ingredients:
3 chiles anchos, roasted and cleaned (remove seeds and skins)
1/4 rough chopped medium onion
1 lg clove garlic, rough chopped
1 tomato ~6oz, broiled or 3/4 roasted canned tomato, drained
3/4 very hot water
3/4t salt or to taste
*Cover the anchos with water and steep 20 minutes. Drain water then blend all the small bowl ingredients until smooth.

Frying pan:
Heat 2T oil (peanut etc) to med-high, add the sauce and cook, constantly scraping the bottom for ~5minutes. Remove from heat and keep warm

Frying pan for the tortillas
Oil depth to 1/4"
Fry each tortilla lightly on each side, drain well and keep warm

This is messy: dip the tortillas in sauce, fill a little of the egg and onion, roll and place side bu side in the warmed dish. Garnish with radishes then cheese and serve. You could baked it just a bit at this stage if preferred.

The less-messy method is to add the filling to the warm tortillas, roll, line up in the dish, pour the sauce over, top with radish and cheese and bake around 300 for a few minutes. Occasionally we just put the radish in with the egg and onion too.

^ate some of this at dinner tonight, it's actually what is in season here in Korea; it's kimchi made from the green tops and stems of young daikon-type radishes. Absolutely great, ate 3 bowls of it with my K-BBQ, and I don't even like kimchi that much. http://cfs5.blog.daum.net/image/19/b...0%EC%B9%98.jpg

put on tortilla and devour. Steak must be marinated for a while to soften up and add flavor.

roasted is great. try tossing them in curry powder.

my favorite is glazed radishes.

if you've got good radishes, my favorite is still the simplest: a crock of cold (not hard) butter and a crack of coarse sea salt. smear the radishes in the butter and dip in the salt. amazing.
