I had two pair of jeans hemmed using the original seem. One pair came out perfect the other just a hair shorter than I like. Im not too familiar with the process of re-attaching the original hem but it looks like the there is slightly less than a 1/2 if material tucked under. Is this usually the case and is it possible to have them remove the hem and let out the remaining material before re-attching again? I hope this makes sense.

Yes, it is possible that the hem could be let out, and lowered. Keep in mind the bottom of the jeans still has to be rolled back under to attach the hem to. If there isn't enough material to pull back under you could possibly do a false hem, which is where you use a second piece of material on the inside of the jeans to sew the hem to. This is good because the jeans can be let all the way out, while still having a hem line.
