I've had so many of my cocktail aware but not exactly literal friends forward me that video. At least Negroni awareness is expanding, but the technique :eh:

My wife surprised me with her version of a dark and stormy earlier this week. It was delicious. Had never had one before, but it’s like my favorite cocktail now.. View attachment 1385692

I regret not going to VTR much when I lived there. However I was even more broke than I am now, so it really wasn't an option except for special occasions.

There was this bar in Pittsburgh called Embury that was amazing for a short period of time, and cheap as far as these things go. They had a bartender who made drinks up on the fly that were better than anything I'd make at home. He moved to New Orleans, and they got some greenhorns that couldn't make anything off-menu, so we stopped going. It doesn't exist anymore.

I'm noticing that's a trend with cocktail bars as they get more popular. They contract the menu to increase profit margins, but it kills the experience for me.

Hell yeah. Paulius' "ginger beer" was from back before you could get a half-decent ginger beer and he made some holy concoction of fermented ginger with habaneros that was the basis for the ginger beer in the D&S and a few other drinks. That's why you'll never have another like that outside of the Velvet Tango Room. I used to do that ginger with a dash of their house red vermouth and bitters as an 'inbetweener' drink sometimes as I don't have prodigious capacity and I have spent over ten hours at that bar on several occasions. That near-mocktail alone was fabulous. And a whisky and ginger? Phenomenal. The whole service industry is getting whacked right now. If the VTR had a fund set up hell I'd contribute. I care about those folks.

Speaking of nice places to drink, one of the things I miss most about Philly are the abundance of plentiful, cozy, neighborhood bars to drink in. These bars and pubs had character, and I'd usually bump into someone from my block most of the time. Houston is a ******* wasteland for spots like this. Prove me wrong.

Only certain areas in Houston have bars like that. I live in First Ward and we have neighborhood bars where a lot of the locals go and hangout.

Where I grew up it felt like everyone had their own favorite cozy place to drink. For my younger years it was a very historic place, The Dominion House: https://en.wikipedia.org/wiki/Dominion_House My heyday mainly fell under Sid's ownership and then the next person, Mandy, to own it after him.

We had a great neighborhood bar by the casa but a few years ago the owner purged the staff and changed the format to what I can only call Mexican for white people. Went from a great place to have something good to eat along the gastropub line, long term, good staff, to noisy, staffed by Chads and Janets, with blah food and ******, ****** batched margaritas.
