I'm looking for something that'll last me awhile since my current jeans are already wearing out after less than two years (that's not typical is it?). The thing is though I'm 6'8" and wear 40x36. Most higher quality jeans only seem to go up to 36x34. Any ideas? Oh, and I don't care for slim cuts at all. I'm much more of a traditional guy. Not trendy in the least.

I am 6'5'' and have similar preferences to you in that I also don't care for slim jeans. I just ordered some APC Rescues, which look more roomy and also come in a 36" inseam. Because I haven't received them yet, I cannot make a definite recommendation, but I was confident enough to try them out.

Your best option is to look at some of the bigger denim threads to find jeans you like the looks of, and then do some more research to see if they come a 36" inseam.

Also, I try to stay away from low rise jeans as it usually takes some of the length away.

I'm 6'6", but skinny.. so I can't really help. I've tried APC Rescues and NS's. The Rescues and NS's are great for length, but I've found the bagginess of the Rescues looks sloppy. 5EP's have good length too, but probably not sufficient waist sizes.

Samurai has a variety of cuts and make 40 inch waists. They're inseams are 38 or so before wash, so around 36" after wash.

Also, the longest inseam 5EP makes is 34". There were a handful of 36" inseams available for the SF x 5EP jean, but those were gone immediately.

Fullcount 1108? They are sold by BiG in size 40 and run close to 38 inches inseam pre-wash.

The rescues look fairly slim on my brother. He's a few inches taller than the OP,and a similar waist size. I wouldn't say they are anywhere near sloppy on him. He has to stretch them back out length wise after a wash to keep the inseam long though. He has had some luck buying some Ande Whall jeans. He custom makes some really good quality denim and has made my brother some 40" inseams a couple of times. You can find his stuff on Superfuture in the denim section. I'm sure if you search a bit on this forum there are more than a couple posts about this issue.
