Is it just me or are plain front shirts (w/o the button placket) getting more and more popular? Is it a new trend?

In manufacturing mass-market shirts, constructing a Plain Front shirt is easier (costs less) than a placket-centered shirt. The reverse is true for a correctly sewn bespoke shirt.

Plain front shirts have always been popular among volume makers due to their reduced cost.

Why is the reverse true for bespoke?
