This weekend at the farmer's market I found a vendor who was willing to get me some sweetbreads and other things. They didn't have any on them at the market, so they told me to call in a special order sometime this week and they'd bring it next week. They specialize in organic grass fed beef and organic pastured pork. I'm trying to find a good vendor for lamb around here that goes to Chicago markets--- if anyone knows of one, let me know.

Anyway, I thought this would be kind of fun. Vote for whatever piece of offal you'd like to see me cook and I will:
1) Contact the vendor and see if they can bring it for me, and if they will,
2) Prepare the offal in either a way suggested in this thread or in my own way
3) Upload pictures of the offal, the cooking process, and the final dish
4) Eat it and comment on it.

Voting will need to end probably by Wednesday sometime, so I can call the vendor and see if they have the item available. Anyway, enjoy.

Aren't brains and sweetbreads the same thing?

I have eaten brain, and remember it as being very good. It was a long time ago.

I've never eaten legendary Rocky Mountain Oysters though I live in Texas.

I voted tongue first. Secondly, I would go for the heart.

I have great love for Mexican tongue tacos, but I also had a wonderful beefheart dish with a green sorrel sauce in the old Jewish quarter of Rome. Rome also has a wonderful tripe dish that you may want to try.

Sweetbreads are Hypothalamus... it's a gland.. very close proximity to brain, but not actually brain.

They can be the pancreas too. Once the animal gets too old, the thalmus gland starts to lose size and get tough, so when they butcher older animals they sometimes take out the pancreas and call it sweetbreads and it gets treated the same way. It's a lower quality cut, but people still use it.

I have very little experience with offal, but I think it'll be fun to see and experiment around.

Two summers back I ate 'orejas' in Madrid. A rare mix of scrunchy- and squishiness. I dare you to make them tasty.

I actually wouldn't mind doing orejas. Part of the problem will be my stove and range, which are both pretty weak, so I might have to do some clever maneuvering to get stuff done.


Also.... looks like I better start looking for a supplier for testes.
