Another Pasta dish I make is "Chicken with Orzo"

Chicken thighs (sear them in the pot first) then deglaze with white wine
Chicken stock
Papardelle peppers
Chopped Tomatoes
Onions
Garlic
Oregano
Sweet Smoked Paprika
Orzo pasta (looks like rice)

Sauté the ingredients in olive oil (I use a Dutch Oven) throw in the seared chicken, cover with stock and bring to the boil and throw in the pasta

Then stick it in the oven and cook it down until the stock is mostly absorbed but don't let it dry out.

@Piobaire beat me to it. Genovese is amazing.

my best pasta advice is to learn the 4 Roman pastas (amatriciana, cacio e pepe, gricia, carbonara). Similar ingredients but all very different and quick to make. Recipes seem simple but take time to master. Once you do, though, tremendous reward:effort ratio.

edit: my recipe is very similar to @Piobaire but I omit the pancetta/salt pork and cook it all in lard.

Nice, I'm Hamish, I live in italy, from Britain originally. I work for IsuiT.

Here are my favorite recipes

Pasta Chickpeas

Put chickpeas in boiling water with parsley and garlic
Leave them for about 2-3 hours
Blend the chickpeas
Add pasta and cook it directly in the soup
Absolutely delicious

Pasta Puttanesca (Neapolitan speciality)

Fry some tomatoes with garlic DO NOT USE ONION AS WELL
Let them fry for a while, until they start to turn into a sauce, you can add some tinned tomatoes if you like sauce
Add black olives, capers, into the sauce
Boil some spaghetti, add plenty of salt and wait until the pasta is still hard, al dente style is the norm in Italy
Mix it all together, don't add any cheese
You can also add tuna or anchovies

You MUST include the anchovies in the beginning of the sauce with the garlic. Mandatory ingredient IMO.

Was craving linguini and had some cheap hot sausage in the freezer. Sliced and browned up the sausage, couple cloves of garlic, pinch of dried chilis then cooked down with canned tomatoes and fresh basil. Thorough mantecare off the heat with a handfull of pecorino.

Another italian here...You have already named my favourite pasta, but i give you some other classic:
- Aglio olio e peperoncino (Garlic, oil and chili pepper);
- Ricotta e noci (ricotta and nuts);
- Ricotta e crema di peperoni + salsiccia o pancettta (Ricotta, peppers cream with optional sausage/bacon);
- Pasta al tonno (tuna with tomato puree) this is the basis, i think that every man here started with this.

Large Fresh Prawns (Shrimps, if you live in the USA)
Garlic
Red Chilli flakes (you can use fresh, but flakes work best)
San Marzano Tomatoes (just a few, crushed in the oil and sautéed a little bit)
Olive Oil
White Wine (just a splash)
Plenty of Lemon Zest to finish the sauce
Your Favourite Brand of Linguine (or home made)

There's a good YouTube channel called "Pasta Grannies", it's a goldmine for authentic Italian dishes.
