Oysters!

I actually found a pearl in an oyster just a couple of weeks ago!



Should I have sent them back?

This steam cooking with black bean sauce is very typical of the Chinese cuisine. Not just oysters, mussels, even fish can be cooked this way.

This past weekend I frequented the Oyster Bar in Grand Central Station in NYC. Between my wife and me we had 3 dozen oysters of different varieties, almost all East Coast. I found that my favorite are the Northeast varieties, specifically varieties from Massachusetts.

+1 Clams in spicy black bean sauce with rice is delicious.

Plain steamed oysters are also great. In fact, plain steamed seafood is great. You can actually taste the sea. (For better or worse)

As a bonus, when its steamed you get the oyster's "water" (I think its condensation flavoured by the oyster's shell...or something). That's great sauce in its own right.
