He does the same thing with raw chicken and seafood. He uses that snot rag, and I'm not kidding about the "snot" portion, to wipe plate rims among other things. I can only imagine what his walk ins and reach ins look like.

ETA: oh yeah, and he wipes the sweat off his dome repeatedly with the same rag.

Tomorrow will be cochinita pibil. Have it marinating right now with lots of citrus juices and the classic paste you see here.

Plenty of whole animal butchery vids on YouTube now but this is one of the best I've seen.


I am about 80% sure it was @iammatt/ @itsstillmatt who took a vacation to France and had a threak about using the entire pig and it was filled with photos. (The threak, not the pig).
