It did not suck. I incorporated some cream cheese, garlic confit, and butter into the polenta.

Ramsay always recommends mixing a raw egg yolk into mashed potatoes to finish them off, I bet that would work well with polenta too.

Thinking of ordering something different for Christmas breakfast. Benton’s? Nueske? We had a ham from SRF that was great and im seeing they make bacon as well.

I've not tried to buy it, so I don't know if it exists for sale, but lamb belly bacon. I've made several batches over the years and it's the best bacon you'll ever taste.

Other than stuff from my local butcher shop - my go to is Nature's Rancher steakhouse cut(wholefoods stocks it most places). Like the very thick cut on it - gives you flexibility to get both crunch and a little chew in the same bite. Also makes a great bloody mary garnish - hit it with a mix of brown sugar and bbq rub and throw it on a pellet smoker for 20/30 at 350.
