Do you cook the saran wrap too?

Of course as it gives the pastry a nice glaze.

Go watch the various YTs on making this; start with Ramsay. You use the cling wrap first to get the layer on nicely then roll it like a tootsie roll really tight to get the nice shape. Works like a charm.

Sorry, no pics. Too busy sipping wine with our good friends. Also, no picture for the Scotch he brought over but I'll talk about it later in the Scotch thread.
