Very few things truly offend me: collar stays, butchering the English language, serving grapefruit on Sundays...

Pan reduction sounds like Black Friday cookware sale. It's a curious term, nothing more.

Anova is digitally harassing me with black friday ads. I figure an immersion circulator / sous vide, is just going to sit in the drawer if I buy one. Anyone use and like them?

I don’t use it a ton, but it’s definitely useful.

Yes, I love my sous vide. For me it's best for ribs, steak and lamb.

I use mine 2-3x a month at least. Using it today to do turkey thighs and legs.

One thing I like is that you can cook straight from frozen. So I'll buy a big pack of pork tenderloins (for example), half them, vac seal, and freeze. Then I can just pull out of the freezer, drop in the water bath for 90 minutes, and sear. It's enough for 2 with no waste.

I honestly haven't played around too much with mine outside of protein, though I keep meaning to.

Yeah, I'll buy packs of prime steaks at Costco, individually pack them with some aromatics, and freeze. Straight into the bath and you've got a nice meal.

For the level of utility, it doesn't really take up much space. I mean...I probably use it more than my stand mixer and it is a fraction of the size.

what i appreciate most as someone who occasionally doesn't have his **** together is the extra latitude to connect your timings. when i forget to mise something or don't time my sear prep correctly, the meat can sit in the bath for a little bit longer, no problem.
