What is everyone making for Thanksgiving?

It will just be my wife and our two boys this year, covid and all, as opposed to the usual 20+ person affair it usual is... part of me is actually looking forward to a scaled down version, although would be nice to see my parents.

1. Turkey breast roulade
2. Turkey legs braised in stock and white wine.
3. Plenty of sage gravy
4. Stuffing with apples, sausage, and sage
5. Haricot vert
6. Sweet potatoes with crumb cake topping
7. Mashed potatoes
8. Homemade pumpkin pie
9. Plenty of Bourbon and wine

I think my brother and his gf are getting takeout Chinese food.

My menu is pretty similar. I was originally do a roulade but I simplified. Just don't want to have a ton of leftovers this year, so I bought packs of thighs, legs, wings, and necks.

1. dark meat turkey (I'll prob. sous vide & sear)
2. gravy
3. sage sausage dressing
4. mashed yukon golds
5. sauteed spinach
6. sweet potato / pee-can pie
7. prob some sort of cider-based cocktail

using the wings & necks to make stock for the gravy & stuffing

my original plan was to do a plated menu with the main being roulade stuffed with the sage/sausage stuffing, pomme puree, some sort of green veg, and cranberry gel. Seems like too much effort right now for just the 2 of us.

Oh, it is actually Thanksgiving week in my house. Prime rib with horseradish sauce for dinner tonight and tomorrow.

Lemon Cranberry Muffins

Since it is just the two of us (and I made a traditional thanksgiving meal on Sunday), we ordered a thanksgiving package from Stephanie Izard's Duck Duck Goat.

It is a chinese-inspired twist on the menu. Peking duck, spiced sweet potatos and green beans, mashed potato egg rolls, steamed buns, and something I can't remember for dessert (and it is now sold out and not visible on the website so I guess it will be a surprise).

The duck will be uncooked but ready to roast, everything else I suspect will be fully prepared and only need reheating.

Was going to make a pumpkin pie too, but I baked one on Sunday so maybe I'll consider something else. Some Mezcal apple cider "margaritas" will be served as well.

I had some pumpkin pie filling left that didn't fit in my pie plate (or the bonus ramekin I filled with the crust trimmings).

So today I made some graham cracker crust for a little 4x6 baking dish to use that up.

But after filling that dish, I had left over graham cracker crust mix.

So then I mixed up some apple pie filling to make a baby apple pie.

Now I have half an apple left, but at least that problem is solvable.

This sounds like the cooking version of the option strategy currently being touted in the investing thread.
