You guys need to try this. I just sliced up a shank, S&P, browned well. Pull out and tossed in a mirepoix, deglazzed with their juices and sweated them. Add some minced garlic. Put it all in the crock pot on low for eight hours with a bottle of dark beer. Tossed in barley an hour before serving. Hard to get easier than that.

So what's more important, or which one has a bigger impact on your enjoyment, the biscuits or the gravey? If one has to suffer, which would you choose?

I'm kinda leaning towards the biscuit being less important, but a bad one of either is catastrophic.

I think you’re onto something. My hunch is that biscuits and gravy was invented as a way to use stale biscuits.

The gravy is a way to use fat and meat scraps. Remember, at one time in history when folks actually did physical labour, getting calories was an issue. ***** meat scraps with milk = protein and calories. No doubt stale bread products were par for the course too.

In colonial times, the average male ate 3000+ calories a day, and a lot of that came from beer. I saw something that the Continental Army included 6 oz of butter as part of their daily ration.

As the actual Southerner... I've found that either component will play down to the other. Because both are so high fat you get that immediate endorphin rush.

I think that there's a couple ways to look at biscuits and gravy qua dish. The first is that the gravy is the star of the show. You will get most flavor and excitement from the gravy. However, the biscuits are the spine of it all. You need a good biscuit to sop up the gravy and make it whole. So they have different roles to play. I tend to like biscuits more than gravy in general.
