Alright, so I watched an Iron Chef Showdown with the chef I had a dinner with the other night and I feel that I should probably post this. Background being that a local chef has pop up dinners at my in laws kitchen and invited the chef he first learned under. The local chef had some great dishes, I thought his dessert was one of the best I ever had, but Chef Miller just was amazing. My favorite dish was a play on al pastor tacos that had local pork added to a corn tortilla paste that was unlike anything I’ve tasted before.

The Chef John 'cheater' demi-glace is my go-to. Veal bones can be tricky to find and expensive.

Have the tips from probably six dozen wings in the freezer for this. The tips have the most collagen so I figure I won't have to waste actual wings!

Made a butter cake with Swiss meringue buttercream for my wife’s birthday. I’ve never scratch baked anything before this other than brownies and maybe Toll House cookies. (Thank you Bravetart/Serious Eats for the foolproof recipes.) It’s not pretty, but it’s tasty.

Made this for dinner (wrong threak i suppose) just now. It was so shockingly good. I knew it would be tasty but there was so much salty tartness with the cheese to mellow at the flavors...man i kept going back for more. I think the salad dressing may become my default dressing for everything. Even ceasar!

Thought I had more basil at home but I didn't and only had mixed greens not the arugula it called for. Obviously both would have been very welcome but the dish didn't suffer in the slightest.
