I was thinking of doing something like that... a turkey roulade.

It is a thanksgiving game changer.

I find that sides are deeply emotional. People expect certain things out of tradition and I am okay with that. If its just you and your wife, this probably matters less. The turkey is the spot to be creative since most turkey is bad.

i also am a fan of starting with a soup. I do either a turkey consommé or butternut squash.

my family is too large for a fine dining thanksgiving but you could do a lot really cool stuff. I am jealous.

Already had mine, but this is one of those times that a small family - you and your wife maybe - is really such a relief.

And forget turkey! Try some game meats, or Caneton aux Navets (braised duck with turnips).

Not eating turkey. Ngl, I hate eating turkey for Thanksgiving since it’s normally dry as ****.
Agreed. Turkey sucks. Years ago, a German colleague invited me and the wife to his house for Weihnachtsgans (Christmas Goose) with chestnut stuffing, dumplings and red cabbage. Now that was a bird worth eating.

A properly cooked turkey is amazing. Preferably stuffed with homemade stuffing.

Turkey is worth it for the gravy alone. I've made a giblet gravy for the past 5 years or so, and it's amazing. (Don't forget the Gravy Master aka MSG.)

In addition, my golf club is infested with wild turkeys and their beady-eyed stares put me off while chipping around the greens.

Turkey is the side dish that accompanies all the carbs and gravy. I'm probably stuck with my in-laws this year as we can't really do other options. My mother in law is a great cook but has some serious narcissism issues and a few years ago she made an entirely carb-free thanksgiving dinner of turkey with various steamed vegetables because she apparently thought it would be healthy and clever and different. Nobody was asked about this in advance. I have not recovered and I have not since agreed to have thanksgiving there again.

Turkey is typically bad because it is impossible to cook a giant turkey and make both the white and dark meat good.

separating the two is the answer... or cooking smaller turkeys... or gravy.

I would just personally feel a lot more thankful if my host had smoked a brisket or roasted a standing rib of beef.
