So yesterday I had a few friends over, and cooked brisket, ribs, and chicken. Oh wait - gotta have vegetables. I wanted to do up some twice-baked potatoes, but had neither potatoes nor time. But, I found a can of instant potatoes...
So - before the guests arrived, I did up the instants. I folded in chopped green onion and bacon bits and put it in a large flat dish. Topped with grated cheddar and baked at 350 until the cheese melted.
I know - heresy. Vegetables from a box. But let's be honest - no matter what I did with the potatoes, they would play second fiddle. I know everyone really came for the pinto beans.
