I am planning a trip to Madrid in January. I have collected this short list of tailors:

I probably will have a few jackets (CMT, to save time and facilitate the fittings) and shirts (ideally with Riva fabric) made to capture the local style as a sort of souvenir. Does anyone have any additional suggestions?

Settle on one or two tailors who are either based near you, or in some place you routinely visit, or who make frequent trips to your area. Allow them to work through various cutting and fitting kinks by giving them repeat business. Stop starting from zero by trying six new tailors on every trip you take, in cities you likely won't be visiting again for years, if ever.

I completely agree generally with your recommendation, the travelling or remote bespoke model is a challenging one and the most difficult to utilize to get nice bespoke clothes. And of course it does nothing to perpetuate local tailoring industry and just reinforces well-established tailoring cities like London and Naples. Nevertheless, the temptation to familiarize myself with a tailoring tradition that is little-known here, as well as have lasting souvenirs that I will enjoy for decades, is great.
