Check here (not advertising the site, just lists lots of styles) Most of the numbers are explained there. It's just the style sizing of the jean. For example: 501 is the "original fit" button fly, 505 is "original" zip fly, 514 is slim fit, 527 is low rise boot cut...etc this thread would be more appropriate to ask jean related questions in the future, just FYI.

You may want to ask in the "Streetware and Denim" section.

Yes, while you're at it, though you know nothing about me or my body type or style, what would be the best jeans for me? I like 501's I think.

Just hit up your local mall and try on a bunch of different styles...we can't tell you what works for you, since everyone is different.

For reference, i'm tall and slim (6'3", 160lbs), and found that 514 slim fits in 31x34 are my best fit. 511, the skinniest fit, were just too tight for me to feel comfortable.

The 'fashion' these days tends to lean towards more slim jeans, but there was just a thread a few weeks back about how "baggy" was coming back (though I will continue to buy 514's until I become a fatass...). If you care of such things you can take that into account.

Original fit is the 501. Slightly slim straight leg, very good, especially the newer ones.

Regular fit is a straight leg, and a relaxed fit is an even looser straight leg cut.

I reccommend either the 501 or 514.
