I picked up a Chemex and made my first cup at lunch today. Was in a hurry and borked the water:coffee ratio, and overdosed the hell out of it. Did something like 38g coffee to 450g water. Came out pretty well, actually, but I was all jittery the whole afternoon.

I know the handy brew is made with some sort of heat proof plastic, as in it won't leak flavor or toxins into your coffee. My clever leaked like a mother.

The older plastic gets, the more likely it will leak stuff. Whether you care about that or not is up to you. I still use my AeroPress without worries. Still, if I had to choose between two "identical" products, one plastic and one ceramic, I'd definitely choose the ceramic version--if reasonably priced.

My CCDs have never leaked. I have dropped them and broken the little nipple thing off, but of the 3 or 4 I've had, none have leaked. The plastic seems to get brittle over time though, as I've also broken the valve nipple by washing it.

Another way around the leaking is to steep your coffee elsewhere and just pour it through the CCD. I guess in that case, you could just use of the pourover cones.

Help me understand this - what does 450g of water mean? a cup? 2 cups?

Yes, but coffee nerds are some of the worst. I am one, but not nearly as bad as most of you douches. I say that with love. Kinda.

You've already got the scale out...just keep the whole thing on the scale, zero it, and start pouring.

450 mL, so ~18 oz. For that amount of coffee, you're supposed to use more like 700 mL.

I'm not ordinarily this precise with coffee, but new to pourovers so I'm trying to get the concept down before I start eyeballing it.

I have yet to try one of these magical pourovers that will supposedly change my mind. "Coffee everywhere, but nothing fit to drink".

Is using a Chemex to make coffee considered "a pourover"? I know that you "pour" water "over" the grounds, but when one talks of the magical pourover they're referring to the weak watery stuff you have to wait for and costs $$$ in the coffee shop, right?
