in my experience yes . my schott dr says lamb suede , my seraphin jackets say lamb / shearling , etc . ( i'd say lamb is typically regarded as premium but it is thinner and softer etc ) .

is there something specific ? happy to take a look
I’ve got a Blake Hedley on the way and I was wondering, thank you. They say “lamb” in the description.

Acne makes solid stuff for both, my gf has a double rider of theirs and it holds up to internet people standards

She's not sure yet. I think a cafe racer style is probably where she'll land.
Schott is a really good place to start particularly if you have access to one of their stores. Lots of styles and sizes to try on at reasonable prices.

Is she looking for something tough? luxurious?

I like what Khaite produces for women.
Stoffa is another good option.

1. My wife would probably kill me if I spent $3000+ on a leather jacket for her.
2. I honestly don't get the price tag on a lot of these. An Aero leather jacket, as an example, you get a quality leather jacket in a classic style made in the UK for <$1000, and I can customize it. I have zero concern about the quality of materials, labor, or durability. I just don't see the value of these higher priced options.

I'd check out the women's stock at Thurston Brothers. Not only do they have Aero and Vanson, they have some vintage stock that is under $200. I have found Carrie's measurements to be very accurate.

For sub 1k, I would definitely check with Johnson Leathers. They are bound to have some stock jackets in women's sizes.

As you've deduced, beyond a certain price bracket it has nothing to do with quality - after that it is merely a function of exclusivity for the wearer to feel more special than the herd of mere mortals;
