It’s really hard to tell from the pictures, but I think the first one looks marginally better.

Would you say the Medium is too big as is? I'm looking to bulk in the future and the small is really tight when I zip it up, would you say it's worth me sticking with the small or medium? Thanks.

Unless bulking has some way to magically lengthen your arms and thicken your wrists, I don't see how that'll help with the medium size.

I think you should post better pictures with the jacket zipped up.

And @Understatesman is the last person from whom I’d take leather jacket sizing advice. ;)

Unfortunately my mirrors are crap so can't really get better pictures, I usually wear it unzipped though that's the thing, so this is how it'd look on me most the time. Here's a picture of the small zipped up:

Something that doesn't make sense to me is the fact that on their website, they claim the model is wearing a Large and is 180cm, which I find hard to believe as I'm 183cm: https://www.schott-store.com/fr_en/lc940d.html

Taste is different. If you like one and also plan to layering, why not? I like my jackets just long enough that when closed they just barely cover the belt. Worn open, a long jacket looks even longer.
The shoulders could certainly use an inch less, the cuffs look wide.

I would say more than marginal for my taste.
