Can a notch lapel jacket be converted to peak lapel? And how difficult would it be to convert flap pockets to besom pockets?

The lapel alteration sounds like it's impossible. Converting flap pockets to besom pockets, on the other hand, is very simple. Anyway, you can always just tuck in the flap; that's what I do.

would the reason be there's no fabrics saved inside the lapel for alterations? if that's the case i would be able to change a peak to a notch lapel?

Yes, there is no cloth to extend the lapel up into a peak. The problem with going from a peak to a notch is the angle of the gorge. You will have a very sloped gorge and will need to reshape the collar. If the lapel buttonhole is cut thru, forget about the whole idea.

+2, I tuck most of the time but would never think of removing them for some mysterious reason.
