I am a weak man....I fell for this 7.5" Gyoto -- basically a Chef's knife, which was the style I was lacking from Itou.

Itou has a whole allotment that became available on the 10th. Get one if you can, they never last a month.... ~ H

The blade is stunning. The mother of pearl is great too but I don't know how practical it is?
