Tonight, four courses:
1. Green lipped abalone, braised winter melon, oyster cream, sea cucumber, garlic flowers, pea seedlings.
2. Confit of pig belly, braise of abalone and cuttlefish, handmade silken tofu, Japanese mushrooms, chive flowers.
3. Poached Rangers Valley, pure bred Black Angus beef fillet, baby spinach, morels, Tasmanian wasabi butter.
4. White peach snow egg.
