how best to break eggs?

I usually crack once gently on the edge of the bowl. Problem is a little of the white escapes and runs down the outside and I usually get a couple of broken bits in the bowl with the egg. I then open with two hands.

Others break onto a flat surface then open over the bowl.

Others (pros?) break on the edge of the bowl and open up with one hand. This is my ambition. Looks cool.

In the movie The Dreamers, a guy breaks a dozen or so directly into the frying pan with the edge of the spatular. This seems fairly cool, too, but I how can one be sure not to get small pieces of shell in there?

Breaking on a flat surface is best because you don't get bits of shell in the egg.
