Short ribs. They always look sad after a couple days in the sous vide bath.

Not a critique, genuinely curious… are smoked short ribs better than a traditional braise with red wine, vegetables, etc?
I like both, but the 48-72 sous vide before smoking method is honestly one of the greatest pieces of BBQ I've ever eaten.
I need a smoker. Ive been putting it off forever.
