Haha, I resisted all those temptations this week when I went. Did see prime brisket was still available (and fairly cheap) and some nice looking wild salmon that was rather affordable but didn’t purchase any meat. Since we now get most of our kids fruit there weekly I’ll get some of that salmon for dinners.Just got back from a Costco run (goodbye 1.5k on pantry ****!) and need to get to work processing. Gonna do a batch of basil and garlic sausage tomorrow morning so will cube up the pork and backfat. Bought a 10# brisket and some chuck and going to cube all that up for a 50/50 grind for hamburgers. Next Saturday we're hosting a few couples from the 'hood for outdoor cocktails and it'll be smash style burgers. Also bought a nice salmon filet and I'll smoke it all tomorrow in dinner sized portions and a few portions for salmon mousse making.
Always get extra marinated egg.
