Just got back from a Costco run (goodbye 1.5k on pantry ****!) and need to get to work processing. Gonna do a batch of basil and garlic sausage tomorrow morning so will cube up the pork and backfat. Bought a 10# brisket and some chuck and going to cube all that up for a 50/50 grind for hamburgers. Next Saturday we're hosting a few couples from the 'hood for outdoor cocktails and it'll be smash style burgers. Also bought a nice salmon filet and I'll smoke it all tomorrow in dinner sized portions and a few portions for salmon mousse making.

Haha, I resisted all those temptations this week when I went. Did see prime brisket was still available (and fairly cheap) and some nice looking wild salmon that was rather affordable but didn’t purchase any meat. Since we now get most of our kids fruit there weekly I’ll get some of that salmon for dinners.

I got a 10lbs prime beef loin (It was a toss up between that and prime rib) from costco last week for Christmas dinner. It was a great price.

I had a request for cassoulet again on Xmas Eve (it's why I'm making the fresh batch of sausage) so we'll have seared duck breasts with a salad, left over beans from the cassoulet, and a loaf of crusty sour dough she'll make. *le sigh* That reminds me I need to hit the big Asian market to get ducks to butcher for the cassoulet.
