I need to fire up the smoker again soon. Have been doing ribs in the Instant Pot lately for the convenience -- comes out well if you just want to harvest and chop the meat to add to egg fried rice or something along those lines.

Somehow ribs are the only mainstay thing I haven't done in my new smoker. Need to bust that out once we manage to escape from the ice storms of the last month.

Not sure where to post this. You guys that shop for meat at Costco. Saw this today. 14 lbs of Serrano Ham. Anyone tried this?

$8/lbs for Serrano seems pretty decent even if it's nothing special.

My brother and I were talking about the jamon at Costco (they have a variety of Ibericos available around Christmas). Apparently we've both been trolling our wives by threatening to buy extremely expensive hams from Costco.

Have only had Serrano at Avec in Chicago. They sliced it so thin using a slicer. Huge serving of Serrano and some fresh crusty bread. Don't think I could replicate that without one. Was really memorable. They also used it in a breakfast dish similar to Shakshuka
Remember Bordain talking about Serrano, maybe on one of his trips to Spain. They were dicussing the best way to slice and serve this and how it's aged.

Yes, but when you slice it paper thin it's a huge yield.
Buy one and I'll take a pound or two
