80/20 choice sirloin to wagyu brisket fat is very flavorful, I'm just not sure it was good to my pallet. Smoked pineapple was good, pineapple BBQ sauce was awesome. Guga buns were good but slightly dry. All in all, 6 out of 10.

Friend made some smoked Armadillo Eggs.

Jalapeño stuffed with cheese in a sausage jacket wrapped in bacon.

When you guys are smoking pork belly (or pork belly burnt ends) , do you finish in the broiler to crisp? Or just eat out of the smoker? (with broiler just for reheat)

I do pork belly burnt ends and just leave them in the smoker. **** i love those. Why am i on such a salad kick atm....

I'm doing this using the kamado as a grill. Hopefully it works.

Some grilled corn and miso butter and a cucumber and grilled potato salad to round thangs out

I'm thinking about smoking some shrimp. Maybe some sort of BBQ peppercorn shrimp with a nice pepper bite to it. Not really sure yet.
