Started it out really low and did some jalapeño and cheddar links to bring by the neighbors for a lunch while we did the cook for dinner.

Brought it up to 250 for about 6 hours after the links finished up.

I pulled it at 203-205ish? I started probing it at 200 and pulled it off when it was buttery. Didn’t wrap or use the tallow this time. Waiting while they rest is the hardest part of the cook.
