I work from home (mostly) and part of my role is to host dinner guests regularly. Put this on bout an hour ago.

Couldn’t capture the giant cast iron pan filled with baked beans hiding stealthily underneath the meat, quietly catching the drippings...

got it trimmed up the other night and Saw that it was too big for the smoker, so I separated the flat. Been drying them a bit in the fridge over the past 2 days cause I hear that helps to form bark. Not sure if I want to reserve the flat and try to make corned beef with it?

The flat will prolly end up kindda dry on the next day, but it should still be nice right out of the smoker after some rest. what kind of electric smoker? i had really good results with ribs and bacon in my old one (MES).

Its a MES - I figure if it doesn't turn out well, I can make it into brisket hash :)

It’s a little dry, but I was expecting that as I didn’t use a water pan or wrap it - wanted to get a baseline. Bark is great though and that was my priority

Looks good man! Try smoking some sausage in it too. They come out nice in the MES because you can keep the temp low (150) and still get smoke with either small chips, or better yet, wood dust.

Shoulders and ribs will be good too!

Yeah, will probably smoke some pork shoulder next, also interested in smoking cheese
