Home Made Sausage, Cured, and Smoked Meats

Doing homemade pizza tomorrow. Should I put browned off homemade, home ground Italian sausage as my second meat (pepperoni is #1) or should I use some smoked brisket I have and shred it?
Sausage then. Stick with the pork theme if you're not going to do anchovies.

Damn playa, the dough is like making sausage or baking - requires some precision for consistent results. The cooking itself I totally agree with doing it by the senses though.
But the components and the environment are not consistent. Basic recipe and adjust based on touch, feel, and sight. ;)

Fun fact. Hawaiian pizza was created by a greek immigrant in Canada. So 0 for 3 there.
Also, based on all the people I know born and raised in Hawaii, they say "fuck off."

So "Windsor style" pizza, as in Windsor, Ontario near where I grew up = shredded pepperoni.

Good anchovies are god's proof he loves us. Bad anchovies are from the Trump administration, i.e. the devil.

I love good anchovies. Some of the best i have had were in Spain at a little tapas place that specialized in curing their own. Especially with some cold beer.

But they have no place on pizza.

Agreed on the Spain part. Best anchovies I ever had was in Spain. Disagree on the anchovies on pizza.
