But the components and the environment are not consistent. Basic recipe and adjust based on touch, feel, and sight.Damn playa, the dough is like making sausage or baking - requires some precision for consistent results. The cooking itself I totally agree with doing it by the senses though.
Agreed on the Spain part. Best anchovies I ever had was in Spain. Disagree on the anchovies on pizza.I love good anchovies. Some of the best i have had were in Spain at a little tapas place that specialized in curing their own. Especially with some cold beer.
But they have no place on pizza.
