My father's infamous Virginia country ham. Slow cooked, scored with clover and basted with his secret brown sugar glaze.

Apple cider during the day (usually served with grain mustard on a biscuit or just plain) and a Henri Gouges white burg for the evening.

WHNAY - is that starting with one of those hard preserved salted hams that you soak or boil to get some salt out, and then cook? do you have a recepe that you can share?

I just put a few slices of the country ham on a sweet potato biscuit and I think I just busted a nut.

GB, my father will post the recipe soon. The answer to your first question is yes.

Cross-posting; I bought this 18lb turkey because it was the smallest they had at Costco; well, I have one of those tiny Asian ovens like Alter, so I realized I'd need to work on it a little if I was ever gonna get the bird in, so I knocked the wings and legs off, ripped all the bones out, and tied the crown up (which took a surprising amount of time for a noob like me)
Turned out pretty well though, a tiny bit dry - I got lazy this week and should've started the day ahead and brined in a low-salt/sugar brine, instead of waiting til 3pm on the day of cooking to start my roast. Lesson learned for next year, I guess.
