Traditionally no, and particularly not with anago, but you won't find many Japanese people who eat any sushi with fingers in the old-fashioned way, and it tends to be westerners who 'know' Japanese culture who insist on things like this much the bemusement of the modern Japanese, who quite rightly regard their culture as a mobile and changing thing...
Such a refined gentleman wouldn't be caught dead eating with his fingers like a caveman!

Zbromer, that looks good, what color is the coat? I can't tell if it is gray or tan. Also, nice collar on the shirt, who is the maker?

Pants and tie are new so I figured I'd give them a whirl. The pant cut I think is a bit tight in the thigh / waist (BB Milano cut) so I may lean toward the either upping the waist or one cut fuller. I don't think I've quite found the right outfit for the tie either but it's a fun tie and I got it on the cheap.

Love the top part, but I have never been fond of two shades of gray being used as the primary colors for pants and a jacket. But I seem to be in the minority here

This is excellent imo. Surprised it was controversial. The jacket looks like it was made for you. What kind of alterations did you have to have done?
Great elements, but I think for once you've over-reached a fraction here with the sheer variety in hue/pattern/texture of the elements.
