What brands are available in Hong Kong and where can I buy them? I might be there for a week or so early next year and want to start planning ahead.

Correct. I'll be there too next year, and will get one or 2 pair made. You can get them for around 200 US, not totally sure if that is MTM or Bespoke though. There was a good thread around not long ago if you search too.

Where are you coming from? Hong Kong has just about everything, but the US is less expensive for the same product unless you want something made for you. If you're looking for John Lobb, Berluti, Edward Green etc, I think you'll find the US a much more sensible place to purchase.

What are shoe prices like in Hong Kong? In Japan, a pair of Alden cordovan blutchers is like 1300 USD (recently its especially high, considering the exchange rate). In the States, the same pair of shoes is about $600. I'll buy my first pair of Aldens eventually, and if the price is reasonable in HK I'll buy a pair when I'm there next month.

^ aldens are more expensive in hkg than in the us. only tassel's have aldens afaik, so if you're looking for a certain model it'd be best to ask them directly.

I have some alden cordovan NSTs that ran about 700 USD. Just a little bit more expensive than what they would cost from leathersoul + shipping.
