With this recipe on Knol, I've made the best pancakes ever. Keys changes for me were--buttermilk, don't overmix the batter, and low heat.

Well conne if you're going to be a fatass then I guess you might as well do it right.

Personally I love my pancakes if they are just a little bit fried on the surface while fluffy ont he inside. A little butter does this amazingly well, and the sweetness of the syrup and the carmelized surface give a texture and taste that is orgasmic. I also recommend using a vanilla bean and some finely ground fresh nutmeg.

This is kind of embarassing, but I recently switched over from my standard pancake recipe to one that was featured in GQ a few months ago. My family loves the results.

My recipe for killer scrambled eggs comes from IHOP. Put a little Bisquick into the beaten egg mixture. Stir more, than make eggs. I find it works better with Egg Beaters. Makes super fluffy scrambled eggs.

I know, not pancakes, but they're really the only things I know how to make that I don't just follow instructions on the box.

Two bowls. In one put 1 1/2 cups milk, 1/3 cup oil or melted butter and one egg. Lightly beat.
In the other put 1 1/2 cups flour, 3 Tbsps of sugar, 1 Tbsp baking powder and 1 tsp of salt. Mix.
Pour liquid onto dry ingredients and mix sparingly, so there is still a few lumps.

I love the croissant french toast but when I crave a pancake or my grandkids want some I use the Kenyon Mills mix from RI. They have a number of very tasty blends.
