Fantasy novels worth reading as an adult?

During winter breaks from school I feel the urge to regress into my childhood (interpret as you will). Are there any fantasy novels or series that can be enjoyed as an adult? I've read LotR of course. Please do not suggest Harry Potter.

George RR Martin's a Song of Ice and Fire series.

I enjoyed Jack vance's dying earth series. The second one in particular. Check out L Sprague decamp.

I also suggest George RR Martin. It's pretty adult reading, but still very cool.

Raymond Feist - Magician (can be read as a stand alone, first of the Sethanon Trilogy) and Faire Tale

Harry Harrison - The Hammer and the Cross (not one stainless steel rat to be found)

Caseal Mor - Circle and the Cross, great celtic fantasy stuff

Weis & Hickam - the Twins Trilogy (yeah I know it's D&D...no dice needed thankfully)

Book of Days - Stephen J Rivell set in the first crusade (SP?)

I love Philip Pullman! Don't let the rather unfortunate film throw you off, these books are well worth reading.

+1 to George RR Martin. The Hobbit and the ring trilogy are always worth re-reading. If you've never read them, you should.

Heinlein is great, but, with the exception of Glory Road, he's a master of "hard" science fiction novels.

Marion Zimmer Bradley's Darkworld series is also interesting, though I confess to having stopped after the first 15 or so.

FWIW, I did not care for the Golden Compass series.

Michael Moorcock's "Elric of Melnibone" series (6 books total, then some tangent ones featuring other characters like Hawkmoon, Corum etc)
